A combination of the elite echo, and mending.

Seriously tho, probably firestorm. I know its a n00b spell, especially for pvp, but nothing is quite as funny as watching a poor helpless necro attempting to move out of the aoe while under mindfreeze. Good times...

As a single skill tho, it has to be Grenths Balance.

Either immolate [because I love setting things on fire], or Spiteful Spirit. Cursing is so much fun.

I also love using Immolate as well.

I also enjoy using Conjure Phantasm. I love that spell!

I don't attach myself to any single profession, in fact there are several builds I play more frequently than an axe Warrior. I just find it hard to believe that noone else would have this at the top of their list, it being the greatest single spike skill in the game and all..

Spectral Agony if I could use it in PvP places (imagine facing PvP characters or people in Ascalon Arena *evil grin*)

Or...Distracting Shot. Love to see Wammo's using Restore Life and using this at the last moment ^^. Gotta be the best interupt in the game (what else gives you +20 seconds recharge time?). You must be thinking Power Block, but only for spells ^^. Elite too.

EDIT: I found some more! Boy am I stupid.

Ranger: Disrupting Lunge
Warrior: Disrupting Chop
Assassin: Disrupting Stab
Mesmer: Psychic Distraction [E], ___ (the signet one that's in Domination)
Elementalist: Icy Prism

Too bored to think of more.

My favorite....
too many, but one of them is Ineptitude, nothing is funnier than letting a warrior hit you and they take 142 dmg and are blinded for 10 seconds. If you use something to speed up the recharge (or to copy it) it is funny to use it over and over and over....

Crippling Shot gets my vote. It's a great snaring skill and has the coolest animation.

Base Defense...

For skills that I can use... I'd probably say Infuse Health, Drain Enchantments, or Spellbreaker

Infuse because I like saying "I totally just saved your ass."

Drain because its been my favorite energy management for the majority of my playing time.

Spellbreaker because it just owns.
